Turkey Taco Soup

Rich and hearty turkey taco soup is slow cooked to perfection. So creamy and full of delicious ingredients, you’ll want to make this recipe year-round.

In my household, I usually have to make at least two different meals to keep all of the boys happy. When I make soup or chili, I can usually convince everyone to eat the same meal. That’s why I decided to come up with this awesome turkey taco soup recipe. Even my pickiest of eaters succumbed to the delicious flavors in this soup. Everyone loved it!

This soup recipe is one you can just throw in the slow cooker. There isn’t much prep involved, other than browning the turkey and dicing the onion. That’s a win in my book! I love any recipe that is easy and involves very little prep work. It also incorporates simple ingredients that are easy to find.

Here’s What You’ll Need:

  • 2 lbs. Ground Turkey-You can sub ground beef
  • 2-15 oz. Cans Black Beans
  • 2 Cans of Rotel or Tomatoes with Green Chilies
  • 1-15.25 oz. Canned Corn
  • 3 Cups Chicken Broth
  • 1 Cup Heavy Whipping Cream
  • 1-8 oz. Cream Cheese
  • 2 Packets Taco Seasoning
  • 1 Diced Medium White or Yellow Onion

How to Make Turkey Taco Soup:

  • Brown the turkey in a skillet.
  • While the turkey is cooking, add the rest of the ingredients to a large slow cooker. Yes, even the cream cheese. It will melt and combine just fine with the rest of the ingredients.
  • Add the cooked turkey and stir the ingredients the best you can. It may be hard to stir the cream cheese. Let it cook a few hours and then stir it again.
  • Cook on high for 4 hours and low for 6 hours. Since cooking time can vary, just make sure the onions are fully cooked and you should be good.
  • Garnish with all the goodness you desire. I love sour cream, Fritos or tortilla chips and cheese! Lots of cheese:)

A Few Tips:

  • Make sure you drain and rinse the black beans. It won’t be detrimental if you don’t drain them, but it will make your soup turn very dark.
  • You can soften the cream cheese before you add it to the slow cooker. It will make it easier to stir. If you’re lazy like me, it’s just as easy to throw it straight in!

  • 1 Medium Yellow or White Onion
  • 2 Packets Taco Seasoning

Instructions

  • Brown the ground turkey in a skillet.
  • While the turkey is cooking add everything else to your large slow cooker.
  • Add the cooked ground turkey to the slow cooker.
  • Stir the ingredients together.
  • Cook on high for 4 hours or low for 6 hours. Cooking times may vary.
