Sausage and Egg Casserole

This sausage and egg casserole recipe is so good y’all. Sometimes I just love to have breakfast for dinner or a casserole for breakfast. I figure when it comes to food you can do pretty much whatever you want. You can eat whenever you want and eat whatever you want. There are really just no rules.

This sausage and egg casserole recipe might not look like much, but I promise it is huge on flavor. Just ask my hubby. He loved it so much he ate leftovers the next day for breakfast and lunch! Look at all that gooey cheesiness and flaky biscuits. So good. I happened to have all of the ingredients on hand because we just love to eat breakfast that much at our house. I’ll bet you have some of the ingredients on hand, too.


  • 8 eggs
  • 1 lb. roll of sausage
  • 1 can of buttermilk biscuits
  • 2 cups sharp cheddar cheese – mild is fine, too
  • I package of country gravy mix
  • 1 cup of 2% or whole milk
  • 1/2 cup of water

I used regular sausage. You can get fancy and use breakfast sausage, hot sausage, etc. As long as it’s sausage, you’ll be good. I did not follow the gravy directions to a T, so pay no attention to the package directions. Simply follow the directions below.

How to Make My Sausage and Egg Casserole:

  • Preheat oven to 350
  • Spray a 9×12 cooking dish with cooking spray
  • Brown the sausage
  • Cut the biscuits into quarters and place in the bottom of baking dish
  • Place cooked sausage on the top of the biscuits
  • Combine the eggs, gravy mix, milk and water in a large bowl
  • Pour the mixture over the biscuits
  • Top with cheese
  • Cook for 45 minutes or until biscuits are nice and fluffy

  • 1 lb Ground Sausage
  • 8 large Eggs
  • 1 packet Country Gravy
  • 2 cups Shredded Sharp Cheese
  • 1 cup Milk
  • 1/2 cup water


  • Preheat oven to 350
  • Brown sausage in a skillet
  • Cut biscuits into quarters and place on bottom of baking dish
  • Mix eggs, gravy, milk and water in a large bowl
  • Place cooked sausage on top of biscuits
  • Pour egg and gravy mixture over biscuits and sausage
  • Sprinkle cheese on top
  • Place in oven and cook for 45 minutes or until biscuits are fluffy


  • Leftovers tasted great the next day, but I don’t think I would store this in the fridge much longer than a day.
