Easy Beef Stew Recipe

If you’re looking for a hearty meat and potato recipe, this easy beef stew recipe is it! It’s the perfect way to warm up on a cold night. It’s easy comfort food that cooks slow all day long. Tender roast and red potatoes come together with baby carrots, potatoes, yellow onion, and celery to create a delicious and savory meal. You basically just put everything into your slow cooker, set it to low, and let it cook.

I used a beef stew seasoning packet to make this easy beef stew recipe in the slow cooker. You can use any type of beef stew seasoning you prefer. It’s what make the juice so very good. It’s just one of the few ingredients you’ll need for this awesome meat and potato recipe.

Easy Beef Stew Recipe Ingredients:

  1. 1 2lb roast. I use a whole roast, you can use beef tips if you prefer. I just think you get more bang for your buck if you buy the whole roast.
  2. 1 1/2 cups of baby carrots
  3. 1 medium yellow onion diced.
  4. 4 stalks of celery
  5. 6 smallish/medium red potatoes
  6. 1 packet of beef stew seasoning
  7. 2 cups of water


  • Place the roast in your slow cooker.
  • Cut up your onion, celery and potatoes and place them in the slow cooker. I like to use pretty decent sized potatoes so they don’t get lost in the slow cooker.
  • Sprinkle the beef stew mix on top of the roast and veggies.
  • Pour the water on top of everything.
  • Set it to low and cook for 8 hours.

Tips for cooking and storing:

*Once the beef is done cooking the roast should pretty much just shred apart. If you need to cut cooking time (cook on high), you can always take the roast out of the slow cooker and cut it into pieces.

*If you need to cook this recipe on high, I suggest cooking for at least 5 hours.

*Since this recipe makes a lot, you might just have leftovers. I usually keep the leftovers in my fridge for about 2-3 days. This meat and potato recipe reheats very well and still tastes just as delicious!

  • Stir the veggies, mix and water the best you can.
  • Place the lid on the slow cooker and cook on low for 8 hours.
